After Tuesday’s dinner fiasco, I was feeling pretty nervous about my roasted chicken plans for tonight. But it turns out I can roast a chicken! It ended up being super easy except I forgot to leave the chicken out for an hour before cooking (per Martha) to get it room temperature. So I had to cook it longer, no big deal. Anyway, all I did was grease the bird up with butter (over and under the skin) and stuff her with lemon, rosemary, garlic, salt and pepper. Then into a 450 oven for 1 hour. I roasted green beans in the same pot… YUM!

I’ll go shopping Sunday for next week’s groceries. I need some fool proof recipes! Please let me know if you have a yummy one

Oh YAY for you on a successful dinner! Looked quite yummy if I say so myself! I can’t wait to see that wreath! I love changing my wreath/decoration on my front door…it symbolizes the change in holidays and or seasons for me. Bring on Fall (since it’s comin anyways) for apple orchard visits and yummy cider and donuts! Oh, and send me your e-mail address at tonidreist@yahoo.com and I’ll send you that yummy turkey meatloaf recipe I was describing in your other post that I racked up 80 (well, it LOOKED like that anyways!) comments on. My kids gobble it and it goes great with either ketchup or BBQ sauce even though there’s a cup of marinara sauce in it. I didn’t think you’d want me posting a recipe on your comment section…might be a tad long! Have a terrific holiday weekend sweet family! :O)
I tried a new recipe tonight that was delish and oh-so-easy.
Fierro Chicken
6 chicken breasts
5 oz softened cream cheese (I used reduced-fat)
1 1/2 c shredded cheddar
1 (4oz) can green chilis
1 T chili powder
3/4 c enchilada sauce
3/4 c heavy cream (I used half & half)
Preheat oven to 350. Spray 9X13 with Pam. Put chicken in bottom of pan. Sprinkle a little salt on the chicken. In a separate bowl, mix the rest of the ingredients. Pour over chicken. Bake 40 minutes.
We served it over brown rice and had sliced avocados with it.

I don’t really use recipes much because I hate to follow rules. (I never could color inside the lines either…hmmm)
Does your family like meatloaf? If so, that is easy to make and you can play up the spices and things that your family likes to make it your own.
